What it Means to Eat the Rainbow and Why You Want To

It’s time for the Summer Rainbow Challenge!

This is the time of year when I do more than just tell you to “eat the rainbow.” I know you’ve heard that advice before. Instead, in this challenge, I will show you how to eat the rainbow and why it’s so important to your health!

Rainbow eating is the absolute easiest way to make a difference to your health. So many people complain that they feel tired all the time, their skin looks older than they want, they suffer from conditions like high blood pressure, borderline or type 2 diabetes, they experience pain on a regular basis and even get sick more often than they should.

These things are directly connected to the foods you eat. The problem is, with the standard American diet that consists of mostly processed foods high in sugar and chemicals, only 12% of Americans get the daily recommended amount of fruit each day and only and only 10% get the recommend amount of vegetables!

Shocking, but not shocking considering the food choices that are all around us. But, with a little knowledge, some delicious recipes and the motivation to do better, you can add some colorful foods to your routine.

The result? Your body will reward you with more energy, glowing skin, improved immunity, reduced inflammation and lower risk of disease. The benefits go on and on, and it’s such a simple solution. It’s just about the colors on your fork!

If you’re skeptical, consider these statistics:

RED foods like tomatoes are rich in Vitamin C and antioxidants that are protective of the skin and the immune system. Tomatoes contain lycopene which is especially protective. One study showed that people eating tomato paste daily for 10 weeks did not get sunburned when exposed to the sun, while a group not eating tomato products did show signs of sunburned or damaged skin with the same sun exposure!

Another study on BLUE, specifically blueberries, showed greater brain activity on the MRIs of those eating the berries daily for 12 weeks. Improved cognitive function with some berries…an amazingly delicious way to prevent mental decline!

The evidence goes on and on, but it’s clear- fruits and vegetables in rainbow colors have a major impact on our health. The greatest benefits come from consuming a variety of colors more often. Since most of us tend to eat the same things over and over, we may not be getting in the full array of nutrients each color has to offer.

But that’s ok! The Summer Rainbow Challenge will show you how delicious it can be to fit in a variety of colors in a fun and delicious way.
