Raspberry Avocado Ice Cream (serves 2)

1 ripe avocado

1 cup frozen raspberries

1/2 banana, frozen in chunks

3 Tbsp canned coconut milk (full fat)

1 Tbsp maple syrup (in the glass bottle- Grade A or B)

Combine all ingredients in a food processor and blend well until creamy.

Topping ideas:

Be creative and add some extra protein with a sprinkle of hemp seeds or chopped pecans, shredded coconut, dark chocolate chips, or granola.
