DIY Easter Candy-Simple and Delicious

DIY Easter candy is so easy to make and much healthier than traditional candies that are loaded with sugars artificial colors and ingredients.

Here are two of my favorite recipes (check out the video for a demo of the nut clusters)

Macadamia Nut Clusters

3/4 cup macadamia nuts

6 oz dark chocolate (70% cacao or higher)

1/4 tsp coarse sea salt

*Line a baking pan with parchment paper.

*Group nuts in clusters of 5 or 6 on the parchment

*Melt chocolate either in microwave, stirring at 30 second intervals, or in a small saucepan on the stove

*Spoon chocolate over each cluster until nuts are mostly covered.

*Place tray in refrigerator for about 20 minutes to set.

Chocolate Eggs

1/2 cup organic smooth peanut butter (or almond butter)

1/2 cup vanilla protein powder (I use vegan Sunwarrior)

3/4 cup dark chocolate chips

3 tsp coconut oil

sea salt for topping

  1. Add nut butter and protein to a bowl and mix well until a dough forms.

  2. Spoon out about 2 Tbsp of dough and roll into balls. Place on parchment paper lined tray and form into egg shapes.. Place tray in freezer for 2 hours

  3. Melt chocolate and coconut oil in microwave, stirring at 30 second intervals until fully melted

  4. Dip each egg into chocolate and place back on tray. Use remaining chocolate to drizzle on top if desired and sprinkle each egg with sea salt

  5. Place back in refrigerator to firm up, about 2 hours more
